1.Preheat the oven to 350°F (180°C).
2.Whisk yogurt, za’atar, paprika, garlic powder, salt, and pepper in a bowl.
3.Massage chicken with the yogurt mixture.
4.Prepare vegetables: chop carrots, slice potatoes, and wedge the onion.
5.Combine potatoes, carrots, oregano, parsley, salt, pepper, and melted butter in a bowl.
6.Place vegetable mixture on a baking sheet and nestle the chicken between pieces.
7.Add onion and whole garlic head to the pan.
8.Drizzle with lemon juice and olive oil.
9.Bake for 60 minutes until chicken is cooked through and potatoes are crispy.
10.Rest for 5 minutes, smash roasted garlic, and serve.
Store leftovers in an airtight container for up to 4 days.
Freeze for up to 3 months.
Reheat in the oven at 350°F until warmed through.
