Tender slow-cooked chicken simmered in a sweet and savory soy honey garlic sauce, perfect for serving over rice.

Ingredients

2 lbs chicken breasts

1 cup reduced-sodium soy sauce

1/2 cup honey

1/4 cup hoisin sauce

1 tbsp rice vinegar

1 tbsp toasted sesame oil

6-8 cloves garlic, grated

2 scallions, sliced

1 tsp sesame seeds

Salt and black pepper to taste

Instructions

1.Place chicken in the slow cooker.

2.Add soy sauce, honey, hoisin, garlic, vinegar, and sesame oil.

3.Season lightly with salt and pepper.

4.Cook on LOW 6-7 hours or HIGH 3-4 hours.

5.Flip chicken halfway through cooking.

6.Shred chicken directly in the crockpot.

7.Mix with the sauce.

8.Serve over rice and garnish with scallions and sesame seeds.

Notes

Use chicken thighs for extra tenderness.

Add fresh ginger for more flavor.

Thicken sauce with a cornstarch slurry if desired.

Great for meal prep and freezing.
