Tender, citrus-marinated chicken served alongside a fresh, zesty zucchini sauté. This simple, flavorful meal is perfect for a healthy weeknight dinner.

Ingredients

1 1/22 lbs boneless skinless chicken thighs

1 large orange (zest and juice)

1 lemon (zest and juice)

3 tablespoons olive oil

34 garlic cloves finely grated

2 teaspoons smoked or sweet paprika

1 1/2 teaspoons ground cumin

1 teaspoon dried oregano

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 tablespoon red wine vinegar

1 1/2 pounds zucchini halved and sliced

1 tablespoon olive oil + 1 tablespoon butter

1 small shallot minced

1 garlic clove minced

2 tablespoons fresh parsley chopped

Instructions

1. Whisk orange and lemon zest/juice with olive oil, garlic, and spices to make the marinade.

2. Add chicken to the marinade and let sit for 20–30 minutes.

3. Sear chicken in a hot skillet for 4–6 minutes per side until cooked through.

4. In a clean skillet, sauté zucchini in oil and butter until tender-crisp.

5. Add shallot and garlic to zucchini and cook for one minute.

6. Finish zucchini with lemon juice, zest, parsley, salt, and pepper.

7. Serve chicken alongside the sautéed zucchini.

Notes

Marinate up to 8 hours in the fridge for deeper flavor.

Use chicken breasts instead of thighs if preferred.

Add red pepper flakes to the zucchini for a bit of heat.
