2 tsp paprika
1 tsp ground cumin
1 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp turmeric
1/4 tsp cayenne pepper
1 tsp salt
4 bone-in, skin-on chicken thighs
2 tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
1 tbsp tomato paste
1 cup chicken broth
1 can (14-ounce) diced tomatoes
1 cinnamon stick
1 preserved lemon, chopped
1/2 cup green olives
1/4 cup fresh cilantro, chopped
1/4 cup fresh parsley, chopped
1. Mix paprika, cumin, ginger, cinnamon, turmeric, cayenne, and salt; rub over chicken thighs.
2. Brown chicken in oil in a large pot, then remove.
3. Sauté onion, garlic, and tomato paste until fragrant.
4. Add broth, tomatoes, and cinnamon stick; return chicken to pot.
5. Boil, cover, and simmer for 30 minutes.
6. Add preserved lemon, olives, cilantro, and parsley; simmer uncovered for 10 minutes.
7. Discard cinnamon stick, season to taste, and serve.
