4 boneless skinless chicken breasts
1 1/2 cups fresh pineapple chunks
1 red bell pepper, sliced
1 small red onion, sliced into thin wedges
1/2 cup BBQ sauce
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and black pepper to taste
Fresh cilantro or parsley for garnish
1. Preheat grill to 400°F or oven to 425°F.
2. Prepare four large sheets of heavy-duty foil and oil the centers.
3. Place a chicken breast on each sheet and drizzle with olive oil.
4. Season each breast with garlic powder, smoked paprika, salt, and pepper.
5. Top each breast with pineapple, bell pepper, and red onion.
6. Spoon 2 tablespoons of BBQ sauce over each packet.
7. Seal packets tightly and grill for 20–25 minutes or bake for 25–30 minutes.
8. Open carefully, garnish with fresh herbs, and serve hot.
Use heavy-duty foil to prevent tearing.
Check internal temperature reaches 165°F before serving.
