Tender boneless chicken cubes marinated in plain yogurt, tandoori masala, lemon juice, garlic, and ginger, then charred.

Ingredients

1 cup plain yogurt

2 tablespoons tandoori masala

1 tablespoon lemon juice

1 teaspoon garlic paste

1 teaspoon ginger paste

Salt, to taste

500 g boneless chicken, cut into cubes

Skewers (wooden or metal)

Chopped cilantro, for garnish

Instructions

1.Combine yogurt, tandoori masala, lemon juice, garlic paste, ginger paste, and salt in a mixing bowl and whisk until smooth.

2.Toss the chicken cubes into the marinade until well-coated, cover, and refrigerate for at least one hour or overnight.

3.Soak wooden skewers in water for 30 minutes if using them.

4.Thread the marinated chicken pieces onto the skewers, leaving small spaces between pieces.

5.Preheat grill or oven to 200°C (400°F).

6.Cook on grill for 15 to 20 minutes turning occasionally or bake on a foil-lined baking sheet for 15 to 20 minutes until cooked and charred.

7.Garnish with chopped cilantro and serve hot.

Notes

Soak wooden skewers to prevent burning during cooking.

Substitute chicken thighs for extra juiciness.

Serve with mint raita and warm naan.
