Savory, quick, and satisfying teriyaki chicken fried rice made in one pan with fresh veggies and a sweet-savory glaze.

Ingredients

1 lb chicken breast, diced

3 cups cooked, chilled rice

2 tbsp vegetable oil

2 cloves garlic, minced

1/2 cup teriyaki sauce

1 cup frozen mixed vegetables

2 green onions, sliced

1 tbsp soy sauce

1 tsp toasted sesame oil

Instructions

1.Heat one tablespoon of oil in a skillet or wok over medium-high heat.

2.Cook diced chicken until golden and done, then set aside.

3.Add remaining oil to the pan and sauté garlic and mixed vegetables.

4.Increase heat, add chilled rice, and fry for 3-4 minutes breaking up clumps.

5.Return chicken to the pan, add teriyaki sauce and soy sauce, tossing rapidly.

6.Finish with sesame oil, fold in green onions, and serve hot.

Notes

Use day-old cold rice for the best texture.

Substitute chicken with tofu for a vegetarian option.

Store in an airtight container for up to 4 days.
